Исполняемый коллективом репертуар включал в себя песни таких исполнителей как "Judas Priest", "Iron Maiden", "Raven", "Thin Lizzy", "Accept", "Scorpions", "Def Leppard", "Rush", "Riot" и некоторых других. Поначалу музыкантам хватало чужого материала, который они играли на концертах в родном Остине. Однако со временем у них стали появляться и собственные вещи, постепенно занимавшие все большую долю в сет-листах. При этом у Watchtower вырабатывался собственный саунд, вобравший в себя влияние как тяжелых команд типа "Rush" и "Raven", так и прог-роковых типа "King Crimson" и "UK".
